Packed full of protein this Roasted Cod and Edamame Salad is the perfect Summer Salad when you don’t want to spend too much time in the kitchen!
Happy Sunday friends! Today I’m bringing you a delicious seasonal salad to help making dinner easier for you!
We have been eating a lot of fish and foods that are high in protein lately so it was natural for me to make this salad.
It was so easy to take all of my ingredients and put them on a tray and roast them right up!
Once they went in the oven everything was completely hands off! Which gave me time to bake up some goodies like these Salted Caramel Meringue Cookies!
This salad is not light weight at all! It is packed full of protein and full of flavor that will definitely fill you up! ENJOY!
Roasted Cod and Edamame Salad #SundaySupper
Ingredients
- 2 4- ounce Cod Loins
- 16 ounces edamame shelled
- 2 carrots of choice sliced
- 10 asparagus spears
- 1 1/2 teaspoon Gomasio or salt
- 2 tablespoons olive oil
- 1/2 head iceberg lettuce chopped
Instructions
- Preheat oven to 415 degrees.
- Place cod, edamame, carrots, asparagus on baking tray.
- Top with gomasio and olive oil.
- Bake for 20-25 minutes.
- Allow to cool for 5 minutes. Top on lettuce.
- Serve and ENJOY!
