Cherry Vanilla Poke Cake

This Cherry Vanilla Poke Cake is a super moist white cake with vanilla pudding, homemade cherry sauce and topped off with whipped topping!

This post and recipe was created for #SummerDessertWeek! I was sent samples by some of the sponsor companies but as always opinions are 100% mine.

So this is my first time making a poke cake and my second time actually eating one! Let me tell you, I am pretty much sold on these cakes. I loved it when I made this Upside Down Brown Sugar Apricot Cake but this one just about beats that!

What’s not to love about a moist cake filled with pudding or sometimes jello and topped with whipped topping! Sounds like a match made in heaven!

Cherry Vanilla Poke Cake #SummerDessertWeek

Yield: 12
Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes

Ingredients

  • For the cake:
  • 1 box white cake mix
  • 3 egg whites
  • 1 cup water
  • 2/3 cup oil
  • for the cherry sauce:
  • 25 cherries, pitted and sliced
  • 1 cup Dixie Crystals White Sugar
  • 1/4 cup water
  • For the pudding:
  • 3.4 ounce box vanilla instant pudding
  • 2 cups milk
  • 8 ounces whipped topping
  • cherries for garnish

Instructions

  1. Preheat oven 325 degrees. Spray 9 x 13 baking pan with non stick cooking spray.
  2. For the cake:
  3. Add cake mix, eggs, water and oil to mixing bowl. Mix on low speed for 30 seconds. Continue to mix on medium speed for 1 minute or until smooth.
  4. Pour into baking pan. Bake for 23-25 minutes or until tooth pick inserted comes out clean. Allow to cool.
  5. For the cherry sauce:
  6. Add cherries, sugar and water to medium size pot. Bring to a boil and cook for 15 minutes. When done, allow to cool for 5 minutes and strain juice from cherries. Keep the juice.
  7. When cake is cooled, poke holes into cake every inch with a wooden or plastic spoon.
  8. Pour the cherry juice over the cake. Set aside.
  9. For the pudding:
  10. Add pudding to large mixing bowl. Whisk in milk. Pour over cake.
  11. Top cake with whipped topping and cherries for garnish!
  12. Serve and ENJOY!

Notes

Store cake in refrigerator.
Make the pudding right before you pour over cake.

Cherry Vanilla Root Beer Float

You guys. I forgot. I forgot about root beer floats. Okay let me explain.

You know when you are a child and you have your favorite treat. And it something you know that is special and you only have it ever so often. That was what root beer floats were for me. I remember my parents keep these glass mugs in the freezer just for a time when they wanted to pull them out and make a float. It was special. It was good. But I forgot about that.

How can that be? Well we become adults. We forget the simple things in life that used to brighten our day. We lose that because we are in fact, adults.

My kids are helping me remember those simple things. And I am SO glad!! Now take this Cherry Vanilla Root Beer Float. It all started with me finally getting around to making homemade ice cream. Another thing that my family did in the summer times. Something I LOVED.

I decided to make ice cream, which lead to me buying some A&W® Root Beer at Meijer. I was able to pick up a few simple ingredients of cherries, vanilla beans, bananas, heavy whipping cream and of course, A&W Root Beer to make these floats! ENJOY!

Cherry Vanilla Root Beer Float

Cherry Vanilla Root Beer Float

Yield: 2
Prep Time: 5 minutes
Total Time: 5 minutes

Ingredients

  • For the ice cream:
  • 1 cup heavy whipping cream
  • 1/2 vanilla bean
  • 1 tablespoon honey
  • 2 bananas, sliced and frozen
  • 1 cup fresh cherries, pitted and diced
  • 2 12 ounce cans A&W Root Beer

Instructions

  1. In mixer add whipping cream, vanilla bean and honey. Whip until stiff peaks, set aside.
  2. In processor add bananas. Process till smooth.
  3. Stir whipped cream into banana mixture.
  4. Stir in cherries.
  5. Refrigerate for 4 hours.
  6. Assemble floats:
  7. Add ice cream to cold glass.
  8. Pour in root beer.
  9. Top with whipping cream and cherry.
  10. Serve immediately and ENJOY!

Notes

You can skip the ice cream making and just buy ice cream to allow this to come together in just a minute!
