This Chicken Bacon Gnocchi Skillet is a delicious one pot meal! With tender chicken, gnocchi and crispy bacon, it makes a complete meal!

We LOVE gnocchi in our house, well except for my youngest. I can’t really understand why, but she doesn’t enjoy it.
Some gnocchi recipes we make often are sage butter gnocchi, creamy gnocchi with corned beef and zucchini (perfect for around St. Patrick’s Day) and pumpkin gnocchi with sage butter sauce (perfect in the fall when fresh pumpkin is abundant.
WHAT IS GNOCCHI?
Gnocchi is a type of Italian dumpling that is typically made with potatoes and flour, sometimes also with eggs. Making homemade gnocchi is kind of a long process so we don’t do it often.
Some questions you might run into when cooking this chicken bacon skillet gnocchi. First is can you use broth instead of water and bouillon? Yes! I just prefer the bouillon I buy over broth but you can easily change it out.
Can I cook the bacon longer and make it crispier? Sure, but it will continue to cook with the chicken and after the gnocchi so I wouldn’t suggest doing it too much.
HOW TO COOK CHICKEN BACON GNOCCHI SKILLET?
INGREDIENTS:
- 2 cups water
- 1 teaspoon seasoned vegetable base bouillon
- 6 slices bacon, diced
- 1 1/2 pounds chicken breast (about 2)
- 2 cloves garlic, diced
- 1/2 medium onion, diced
- 1/2 teaspoon salt
- 1 pound gnocchi
- 1/2 cup heavy cream
- 1 tablespoon extra virgin olive oil (optional)
DIRECTIONS:
- Place water and bouillon in measuring cup and heat in microwave for 1 minute. Whisk together and set aside.
- In large skillet on medium heat add bacon. Cook for 3-5 minutes or until cooked lightly crispy. Remove from skillet, leaving grease.
- Next add chicken and sear on medium high heat for 3-5 minutes. Turning often. Remove from pan.
- Add diced onion and garlic to skillet. Cook on medium heat for 3 minutes or until translucent. (may need to add a tablespoon oil if not enough left from bacon)
- Add back into the skillet bacon, chicken. and salt. Cook for 2 minutes.
- Place gnocchi in skillet on top of meats.
- Pour in water and heavy cream. Stir together. Make sure gnocchi is covered in liquid.
- Allow to simmer for 5-7 minutes or until gnocchi is cooked and sauce is creamy.
- Serve warm and ENJOY!
