Funfetti Cake Mix Popcorn

We had a party this weekend. It was for Giulia’s 1st birthday. Since I made her cake funfetti last week I thought it would be cute to add a few other treats to the table that were funfetti inspired.

This popcorn was surprisingly good. I didn’t even pop the corn until the guest had already arrived. So it was me and my twiny there throwing together these ingredients to produce this. It was so easy and quick.

I can’t quite decide what to make of it. Or how the guest liked it. But let me tell you, I put two bowls on the table and when I came back to munch on it, it was gone. So did they like it? I think so!

We were divided half adults, half kids. So I really do not know who liked it more or if this is more kid friendly or adult friendly. If I find out, I will tell you.

Funfetti Cake Mix Popcorn

Most recipes for this on the net will call it cake batter popcorn. Since I am a tab bit more technical I decided to call it Cake Mix Popcorn. You see you don’t add the batter, you add the mix. The batter is after you put in the eggs, oil and water. This is just the mix straight from the box. Now that I have that out of the way. On to the recipe!

FUNFETTI CAKE MIX POPCORN

YIELDS: 8

PREP TIME: 5 minutes

COOK TIME: 5 minutes

TOTAL TIME: 10 minutes

Ingredients:

8 cups popped popcorn

3/4 cups white chocolate chips

3 tablespoons funfetti cake mix

2 teaspoons shortening

sprinkles

Directions:

1. Pop popcorn and set aside to cool on cookie sheet.

2. Melt white chocolate. Add shortening to thin it out a bit.

3. Add cake mix. Stir till combined well.

4. Put popcorn in bowl. Pour white chocolate mixture over the popcorn then mix.

5. Shake sprinkles over for color and decoration.

6. ENJOY!

Butterscotch/Chocolate Popcorn

Butterscotch Chocolate Popcorn

I was trying to think of a fun and festive type snack to feed to the kids this last weekend while we were celebrating our Christmas together.

I have been thinking for some time to get creative with popcorn. I am a little boring when it comes to popcorn. I like mine plain with a little bit of salt and NO butter. I want to actually taste the popcorn.

Anyways so I was figuring out how to spruce it up and this came along. We were eating it faster than I could make it. What I would do next time is go more heavy handed on the drizzling of these delicious flavors. You can definitely skip the wait time and just dig in!

BUTTERSCOTCH/CHOCOLATE POPCORN

YIELDS: 4 CUPS

PREP TIME: 25 minutes

COOK TIME: 5 minutes

TOTAL TIME: 30 minutes

Ingredients:

popcorn kernels

vegetable oil

1/4 cup butterscotch chips

1/4 cup semi-sweet chocolate chips

Directions:

1. Pour oil into a pot and add popcorn kernels. This should be enough to just cover the bottom of your pot.

2. Cover with lid and cook over medium heat.

3. Popcorn is done when the popping sound slows and only happens every 4-5 seconds.

4. Lay out cooked popcorn on a baking sheet with parchment paper.

5. Melt butterscotch chips and drizzle.

6. Melt semi-sweet chocolate chips and drizzle.

7. Wait for 15 minutes for it to harden and ENJOY!!

Baking Day 1. Cinnamon White Chocolate Pretzels

Cinnamon White Chocolate Pretzels

This weekend I got to spend some time with family out of town. It was great to see my parents, sisters, brother in law, nieces and nephew. What was really great was that I got to do some holiday baking with a couple of my sisters. It is so fun spending time in the kitchen with family. My sister Jill brought over some ingredients and we decided to make something she saw on Pinterest. This was super easy and actually helped me figure out a great way to drizzle chocolate without having a plastic bottle to do it.

Cinnamon White Chocolate Pretzels

Got this from my sister Jill who got it online. I searched it and found the original so you can find it Cinnamon Toast White Chocolate Pretzels

What I am going to do differently is give you step by step instructions and the list of ingredients on how to whip these up!

YOU WILL NEED:

Pretzels (Snaps)

Cinnamon

Sugar

Oil

Cinnamon and sugar mixture for sprinkling

White Chocolate

DIRECTIONS:

Mix oil, sugar and cinnamon.

Pour mixture of oil, sugar and cinnamon over pretzels in a microwaveable bowl.

Toss to coat the pretzels.

Spread out onto a sheet pan lined with parchment paper.

Spread out into a single layer.

Sprinkle with cinnamon/sugar mixture.

YUM!

So next melt your white chocolate over a double boiler.

Spoon into a sandwich bag.

Cut the edge and drizzle.

(WARNING THIS IS HOT. I HAD TO USE A PAPERTOWEL BETWEEN MY HAND AND BAG)

REST FOR 15 MINUTES TO ALLOW CHOCOLATE TO SET.
